Aloo Dosa

Ingredients:
- 1 cup dosa batter (store-bought or homemade)
- 2 large potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp cumin seeds
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- Prepare the Potato Filling: Heat 2 tbsp of oil in a pan over medium heat. Add the mustard seeds and cumin seeds. Once they start to crackle, add the finely chopped onions and green chilies. Sauté until the onions are translucent.
- Cook the Filling: Add the turmeric powder, garam masala, and salt to the pan. Stir well. Add the mashed potatoes and mix thoroughly, cooking for another 5 minutes. Remove from heat and garnish with chopped coriander leaves. Set aside.
- Make the Dosa: Heat a non-stick griddle or skillet over medium heat. Lightly grease it with oil. Pour a ladleful of dosa batter onto the griddle and spread it into a thin, even circle.
- Cook the Dosa: Cook the dosa for a few minutes until the edges start to crisp up. Place a spoonful of the potato filling in the center of the dosa. Fold the dosa over the filling to form a semi-circle or triangle.
- Serve: Serve the hot aloo dosa with coconut chutney and sambar. Enjoy your meal!
Notes:
You can adjust the spice level of the potato filling according to your taste. If you prefer a spicier dosa, add more green chilies or red chili powder to the filling.
