Ingredients:

  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 cup cream
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

Preparing the Koftas:

  1. Mix the Kofta Ingredients: In a bowl, combine the grated paneer, mashed potatoes, cornflour, salt, raisins, and chopped cashews. Mix until smooth and well combined.
  2. Shape the Koftas: Take small portions of the mixture and shape them into round balls (koftas). Make sure the mixture is firm; add a little more cornflour if it feels too soft.
  3. Fry the Koftas: Heat oil in a deep pan over medium heat. Fry the koftas until they are golden brown and crispy. Drain them on paper towels and set aside.

Making the Gravy:

  1. Prepare Aromatics: In a large pan, heat oil and butter. Add cumin seeds and let them splutter. Add the chopped onions and cook until golden brown.
  2. Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant.
  3. Incorporate Spices and Tomato Puree: Add the turmeric powder, red chili powder, and pureed tomatoes. Cook until the oil separates from the tomato mixture.
  4. Add Cashew Paste: Add the cashew paste and cook for another 5 minutes, stirring frequently to avoid sticking.
  5. Season and Simmer: Add salt and garam masala, and simmer the gravy for 10 minutes, adding water as needed to reach a thick, smooth consistency.
  6. Finish with Cream: Stir in the cream and let the gravy simmer for another 5 minutes.

Combine and Serve:

  1. Add Koftas to Gravy: Just before serving, gently add the koftas to the gravy. Let them heat through for a few minutes but avoid prolonged cooking to keep the koftas from breaking apart.
  2. Garnish and Serve: Garnish with fresh cilantro and additional cream if desired. Serve hot with naan, roti, or rice.

Notes:

For extra richness, drizzle a little cream on top before serving. You can also prepare the koftas ahead of time and add them to the gravy just before serving to keep them soft yet intact.
