Pork Tenderloin with Apple Sauce

Ingredients:
- 1 pork tenderloin (about 1 pound)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon butter
- 2 apples, peeled, cored, and sliced
- 1/4 cup apple cider
- 1/4 cup chicken broth
- 1 tablespoon honey
- 1/2 teaspoon ground cinnamon
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Season the pork tenderloin with salt, pepper, and thyme.
- Sear the Tenderloin: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.
- Roast the Pork: Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Remove the pork from the skillet and let it rest for 5-10 minutes.
- Make the Apple Sauce: While the pork is roasting, melt the butter in a medium saucepan over medium heat. Add the sliced apples and cook for 5-7 minutes, until they begin to soften. Stir in the apple cider, chicken broth, honey, and cinnamon. Simmer for 10 minutes, until the apples are tender and the sauce thickens slightly.
- Serve: Slice the pork tenderloin and serve with the warm apple sauce on top or on the side. Enjoy!
Notes:
For extra flavor, you can deglaze the skillet with a splash of white wine before roasting the pork. Serve with roasted vegetables or mashed potatoes for a complete meal.
