Ingredients:

  • 1 cup dosa batter (store-bought or homemade)
  • 2 large potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. Prepare the Potato Filling: Heat 2 tbsp of oil in a pan over medium heat. Add the mustard seeds and cumin seeds. Once they start to crackle, add the finely chopped onions and green chilies. Sauté until the onions are translucent.
  2. Cook the Filling: Add the turmeric powder, garam masala, and salt to the pan. Stir well. Add the mashed potatoes and mix thoroughly, cooking for another 5 minutes. Remove from heat and garnish with chopped coriander leaves. Set aside.
  3. Make the Dosa: Heat a non-stick griddle or skillet over medium heat. Lightly grease it with oil. Pour a ladleful of dosa batter onto the griddle and spread it into a thin, even circle.
  4. Cook the Dosa: Cook the dosa for a few minutes until the edges start to crisp up. Place a spoonful of the potato filling in the center of the dosa. Fold the dosa over the filling to form a semi-circle or triangle.
  5. Serve: Serve the hot aloo dosa with coconut chutney and sambar. Enjoy your meal!

Notes:

You can adjust the spice level of the potato filling according to your taste. If you prefer a spicier dosa, add more green chilies or red chili powder to the filling.
