Ingredients:

  • 2 cups cooked rice (preferably short-grain)
  • 1 cup spinach, blanched and chopped
  • 1 cup bean sprouts, blanched
  • 1 cup carrots, julienned and sautéed
  • 1 cup zucchini, julienned and sautéed
  • 4-6 shiitake mushrooms, sliced and sautéed
  • 1 tablespoon vegetable oil
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon sesame seeds
  • 1-2 eggs (optional, fried or poached)
  • Kimchi (for serving)
  • Gochujang (Korean red chili paste) to taste
  • Salt and pepper to taste

Instructions:

  1. Prepare Vegetables: Blanch spinach and bean sprouts in boiling water for 2 minutes, then drain and cool. Sauté carrots, zucchini, and mushrooms separately in a pan with a little vegetable oil until tender. Season with soy sauce, salt, and pepper.
  2. Prepare Rice: Cook rice according to package instructions. Keep warm.
  3. Assemble Bibimbap: In a large bowl, place a serving of rice as the base. Arrange the prepared vegetables and mushrooms around the rice in a circular pattern. Place a fried or poached egg in the center if desired.
  4. Season: Drizzle sesame oil over the vegetables and rice. Sprinkle sesame seeds on top. Add gochujang according to your taste preference. Mix everything together before eating to combine the flavors.
  5. Serve: Serve the Bibimbap with a side of kimchi for added flavor and crunch.
