Ingredients:

- 2 tablespoons sesame oil

- 1-2 eggs (optional, fried or poached)
- Kimchi (for serving)
- Gochujang (Korean red chili paste) to taste
- Salt and pepper to taste
Instructions:
- Prepare Vegetables: Blanch spinach and bean sprouts in boiling water for 2 minutes, then drain and cool. Sauté carrots, zucchini, and mushrooms separately in a pan with a little vegetable oil until tender. Season with soy sauce, salt, and pepper.
- Prepare Rice: Cook rice according to package instructions. Keep warm.
- Assemble Bibimbap: In a large bowl, place a serving of rice as the base. Arrange the prepared vegetables and mushrooms around the rice in a circular pattern. Place a fried or poached egg in the center if desired.
- Season: Drizzle sesame oil over the vegetables and rice. Sprinkle sesame seeds on top. Add gochujang according to your taste preference. Mix everything together before eating to combine the flavors.
- Serve: Serve the Bibimbap with a side of kimchi for added flavor and crunch.
