Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, grated
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 1 1/2 cups Arborio rice
  • 4 cups chicken broth
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound mussels, cleaned
  • 1/2 pound chicken thighs, cut into pieces
  • 1/2 pound chorizo, sliced
  • 1/2 cup frozen peas
  • Fresh parsley for garnish
  • Lemon wedges for serving
  • Salt and pepper to taste

Instructions:

  1. Prepare Ingredients: Begin by prepping all the ingredients. Dice the onion and bell peppers, mince the garlic, grate the tomatoes, and slice the chorizo.
  2. Cook Chicken and Chorizo: In a large paella pan, heat the olive oil over medium heat. Add the chicken thighs and chorizo slices, cooking until browned. Remove and set aside.
  3. Sauté Vegetables: In the same pan, add the onion, garlic, and bell peppers. Sauté until softened, about 5 minutes. Stir in the grated tomatoes, smoked paprika, and saffron. Cook for another 2 minutes.
  4. Add Rice and Broth: Stir in the Arborio rice, making sure it’s well coated with the vegetable mixture. Pour in the chicken broth and bring to a simmer. Let the mixture cook uncovered for about 10 minutes.
  5. Add Seafood and Meat: Arrange the shrimp, mussels, browned chicken, and chorizo over the top of the rice. Add the frozen peas. Do not stir. Cover the pan with foil and reduce heat to low. Cook for an additional 15-20 minutes, or until the rice is tender and the seafood is cooked through.
  6. Finish and Serve: Remove the paella from the heat and let it sit, covered, for 5 minutes. Garnish with fresh parsley and serve with lemon wedges on the side.
