Ingredients:

  • 1 large butternut squash, peeled, seeded, and cubed

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Roast the Butternut Squash: Toss the butternut squash cubes with olive oil and a pinch of salt and pepper. Spread them in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until tender and lightly caramelized.
  3. Sauté the Aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and cook for 5-7 minutes, or until softened and translucent. Add the minced garlic and cook for another minute until fragrant.

  5. Add Coconut Milk and Season: Stir in the coconut milk, ground cumin, and ground nutmeg. Season with salt and pepper to taste. Simmer for another 5 minutes, then remove from heat.
