Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: sour cream, shredded cheese, salsa, guacamole

Instructions:

  1. Prepare Chicken: In a bowl, toss the sliced chicken with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Let marinate for at least 15 minutes.
  2. Cook Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onion and bell peppers. Cook, stirring occasionally, until the vegetables are tender and slightly charred, about 5-7 minutes. Remove from skillet and set aside.
  3. Cook Chicken: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the marinated chicken and cook until fully cooked and slightly charred, about 6-8 minutes. Add the minced garlic and cook for an additional minute.
  4. Combine: Return the cooked vegetables to the skillet with the chicken. Stir to combine and heat through, about 2-3 minutes.
  5. Warm Tortillas: Warm the flour tortillas in a dry skillet or microwave until soft and pliable.
  6. Serve: Serve the chicken and vegetable mixture in warm tortillas. Garnish with fresh cilantro and your choice of optional toppings.

Notes:

For a smoky flavor, consider adding a pinch of smoked paprika. You can also use corn tortillas for a gluten-free option.
