Chicken Marsala

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons olive oil
- 8 ounces cremini or button mushrooms, sliced
- 3/4 cup Marsala wine
- 1 cup chicken broth
- 2 tablespoons unsalted butter

Instructions:
- Prepare the Chicken: Flatten the chicken breasts to an even thickness by pounding them lightly. In a shallow dish, mix the flour, salt, and pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
- Cook the Chicken: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the chicken breasts and cook for about 4-5 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and keep warm.
- Sauté the Mushrooms: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the sliced mushrooms and cook until they are browned and tender, about 5 minutes.
- Make the Sauce: Add the Marsala wine to the skillet, scraping up any browned bits from the bottom. Allow the wine to simmer and reduce by half, about 3-4 minutes. Add the chicken broth and continue to simmer for another 5 minutes.
- Finish the Dish: Return the chicken breasts to the skillet, spooning the sauce and mushrooms over them. Cook for an additional 2-3 minutes until the chicken is heated through and the sauce has thickened slightly. Stir in the butter until melted and the sauce is glossy.
- Serve: Garnish with chopped fresh parsley if desired. Serve the Chicken Marsala over pasta, rice, or with a side of vegetables.
