Classic Italian Tiramisu

Ingredients:

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 1/4 cups mascarpone cheese
  • 1 3/4 cups heavy cream
  • 2 cups espresso or strong coffee, cooled
  • 1/4 cup coffee liqueur (optional)
  • 40-50 ladyfingers (Savoiardi)
  • Unsweetened cocoa powder for dusting
  • Dark chocolate shavings for garnish (optional)

Instructions:

  1. Prepare the Mascarpone Mixture: In a medium bowl, whisk the egg yolks and sugar together until pale and fluffy. Gently fold in the mascarpone cheese until smooth and creamy.
  2. Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  3. Mix the Coffee: Combine the cooled espresso with coffee liqueur (if using) in a shallow dish. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  4. Assemble the Tiramisu: In a large rectangular dish, arrange a layer of the soaked ladyfingers. Spread half of the mascarpone cream mixture evenly over the ladyfingers. Repeat with another layer of ladyfingers and the remaining mascarpone cream.
  5. Chill and Serve: Cover the dish and refrigerate for at least 4 hours, preferably overnight. Just before serving, dust the top with cocoa powder and add dark chocolate shavings if desired.

Notes:

Tiramisu can be made a day in advance, allowing the flavors to meld perfectly. For a non-alcoholic version, omit the coffee liqueur. Serve chilled.
