Goulash

Ingredients:
- 2 tablespoons vegetable oil
- 1 pound beef chuck, cut into cubes
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried thyme
- 1 can (14 ounces) diced tomatoes
- 2 cups beef broth
- 2 large potatoes, peeled and cubed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- Salt and pepper, to taste
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions:
- Heat Oil: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Brown the Beef: Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.
- Sauté Onions and Garlic: In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
- Add Spices: Stir in the paprika, caraway seeds, and dried thyme, cooking for 1 minute until fragrant.
- Combine Ingredients: Return the browned beef to the pot. Add the diced tomatoes and beef broth, stirring to combine.
- Simmer: Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the beef is tender.
- Add Vegetables: Add the cubed potatoes and bell peppers to the pot. Continue to simmer for another 30 minutes, or until the vegetables are tender.
- Season: Season with salt and pepper to taste. Stir well.
- Garnish and Serve: Garnish with chopped fresh parsley, if desired. Serve hot with crusty bread or over noodles.

You can adjust the level of paprika to suit your taste, adding more for a spicier goulash. This dish is even better the next day, as the flavors have more time to meld together.
