Homemade Sushi Rolls

Ingredients:
- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1 teaspoon salt
- 4-6 sheets nori (seaweed)
- 1/2 pound sushi-grade raw fish (e.g., tuna or salmon), thinly sliced
- 1 cucumber, julienned
- 1 avocado, sliced
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions:
- Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat and simmer for 18-20 minutes. Let it cool slightly.
- Season the Rice: In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt are dissolved. Gently fold this mixture into the cooked rice. Allow the rice to cool to room temperature.
- Assemble the Sushi Rolls: Place a bamboo sushi mat on a clean surface and cover it with plastic wrap. Lay a sheet of nori, shiny side down, on the mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch of nori at the top edge.
- Add Fillings: Arrange a few slices of raw fish, cucumber, and avocado in a horizontal line across the center of the rice.
- Roll the Sushi: Using the bamboo mat, carefully lift the edge of the nori and rice closest to you and roll it over the filling, pressing gently to shape the roll. Continue rolling until you reach the exposed edge of nori. Use a sharp knife to slice the roll into bite-sized pieces, cleaning the knife between cuts.
- Serve: Arrange the sushi rolls on a platter. Serve with soy sauce, pickled ginger, and wasabi. Enjoy your homemade sushi!
