Black Bean Tacos

Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 tablespoon olive oil
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup crumbled feta or Cotija cheese
- 1/2 cup chopped cilantro
- 1 lime, cut into wedges
- Optional toppings: sour cream, avocado, salsa
Instructions:
- Prepare the Beans: In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for 3-4 minutes until soft and fragrant.
- Add Spices: Stir in the cumin, chili powder, and smoked paprika. Cook for another 1 minute, allowing the spices to bloom.
- Add Black Beans: Add the black beans to the skillet and cook for 5-7 minutes, mashing some of the beans with the back of a spoon to create a slightly creamy texture. Season with salt and pepper to taste.
- Warm Tortillas: In a dry skillet or over an open flame, warm the tortillas on both sides until slightly charred and pliable.
- Assemble the Tacos: Spoon the black bean mixture onto each tortilla. Top with crumbled cheese, chopped cilantro, and any additional toppings like sour cream, avocado, or salsa.

Notes:
