Beef Enchiladas

Ingredients:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup tomato sauce
- 8 large flour tortillas
- 2 cups shredded Mexican blend cheese
- 1 can (10 oz) enchilada sauce
- 1/4 cup sour cream (optional, for serving)
- Chopped cilantro, for garnish
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Add the chopped onion and minced garlic, and cook for 3-4 more minutes until softened.
- Season the Beef: Stir in the taco seasoning and 1/2 cup of tomato sauce. Simmer for 5 minutes, allowing the flavors to meld. Remove from heat.
- Assemble the Enchiladas: Lay each tortilla flat and spoon some of the beef mixture into the center. Top with a sprinkle of shredded cheese. Roll up the tortilla tightly and place it seam-side down in the prepared baking dish.
- Add the Sauce: Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining shredded cheese on top.
- Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, until the cheese is melted and bubbly.
- Serve: Remove from the oven and let the enchiladas cool for a few minutes. Garnish with chopped cilantro and serve with sour cream, if desired.
Notes:
For a spicier version, add chopped jalapeños to the beef mixture or top with hot sauce before serving.
