Chicken Parmigiana

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup fresh basil leaves, chopped (optional)
- Olive oil, for frying
Instructions:
- Prepare the Chicken: Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper. Dredge each chicken breast in flour, then dip into the beaten eggs, and coat with a mixture of breadcrumbs, Parmesan cheese, oregano, and garlic powder.
- Fry the Chicken: In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for 3-4 minutes on each side, until golden brown and crispy. Remove and drain on paper towels.
- Top with Sauce and Cheese: Spread 1/2 cup of marinara sauce on the bottom of a baking dish. Place the fried chicken breasts on top, then spoon the remaining sauce over each piece. Sprinkle shredded mozzarella cheese on top.
- Bake: Bake in the preheated oven for 20-25 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and garnish with fresh basil. Serve with spaghetti or a side salad, if desired.
Notes:
For extra crispiness, you can broil the chicken for an additional 2-3 minutes after baking. Substitute marinara with your favorite tomato sauce for a personalized touch.
