Pesto Chicken Pasta

Ingredients:
- 8 oz pasta (penne or fusilli)
- 1 lb chicken breast, diced
- 1 cup basil pesto
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions:
- Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
- Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Season the diced chicken with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 5-7 minutes.
- Add the Pesto: Stir in the basil pesto and cherry tomatoes. Cook for an additional 2-3 minutes until heated through.
- Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to combine everything well. If the mixture seems dry, add a splash of pasta water.
- Serve: Remove from heat and stir in the grated Parmesan cheese. Serve hot, garnished with fresh basil leaves if desired.
Notes:
You can customize this recipe by adding vegetables like spinach or zucchini. For a vegetarian option, substitute the chicken with chickpeas or tofu.
