Seared Scallops

Ingredients:
- 1 lb large sea scallops
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 clove garlic, minced
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Scallops: Pat the scallops dry with paper towels. Season both sides with salt and pepper.
- Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Sear the Scallops: Place the scallops in the skillet, ensuring they are not touching. Sear for 2-3 minutes on each side, until a golden-brown crust forms. Do not move them while searing.
- Add the Butter and Garlic: Lower the heat to medium and add the butter and minced garlic. Allow the butter to melt and baste the scallops with the butter mixture for 1 minute.
- Finish with Lemon: Squeeze the lemon juice over the scallops, and give them a final baste in the garlic butter sauce.
- Serve: Remove from heat, garnish with fresh parsley, and serve immediately.
Notes:
For the best sear, ensure your scallops are very dry, and the pan is hot before adding them. You can also add a splash of white wine to the pan for extra flavor.
