Spaghetti Aglio e Olio

Ingredients:
- 12 oz spaghetti
- 6 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh parsley, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Grated Parmesan cheese (optional)
Instructions:
- Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
- Sauté the Garlic: While the spaghetti cooks, heat the olive oil in a large skillet over medium heat. Add the garlic slices and sauté until they turn golden brown and fragrant, about 2 minutes. Be careful not to burn the garlic.
- Add the Red Pepper Flakes: Stir in the red pepper flakes (if using) and cook for another 30 seconds.
- Toss the Spaghetti: Add the drained spaghetti to the skillet with the garlic and oil. Toss to coat the pasta, adding reserved pasta water as needed to loosen the sauce.
- Season: Remove from heat and stir in the chopped parsley. Season with salt and freshly ground black pepper to taste.
- Serve: Transfer to serving plates and top with grated Parmesan cheese, if desired. Enjoy!
Notes:
For a richer flavor, you can add a squeeze of lemon juice or zest over the pasta before serving. For a protein boost, add grilled shrimp or chicken.
