Stuffed Chicken Breast

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon paprika
- 1 tablespoon fresh parsley, chopped
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Prepare the Filling: In a small bowl, mix together the spinach, feta cheese, sun-dried tomatoes, and garlic. Season with a pinch of salt and pepper.
- Prepare the Chicken: Using a sharp knife, cut a deep pocket into the side of each chicken breast. Be careful not to slice all the way through.
- Stuff the Chicken: Spoon the spinach and feta mixture into the pocket of each chicken breast. Secure with toothpicks if necessary.
- Season the Chicken: Rub the outside of each stuffed chicken breast with olive oil, then season with salt, pepper, and paprika.
- Bake: Place the stuffed chicken breasts into the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Garnish and Serve: Remove from the oven and allow the chicken to rest for 5 minutes. Sprinkle with fresh parsley before serving. Enjoy!
Notes:
You can substitute feta cheese with goat cheese or cream cheese for a creamier filling. Serve with a side of roasted vegetables or a fresh salad.
