Ingredients:

  • 2 packs ramen noodles
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons miso paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 cup sliced mushrooms (shiitake or button)
  • 1 cup baby spinach
  • 1/2 cup corn kernels
  • 2 green onions, sliced
  • 2 soft-boiled eggs
  • 1 sheet nori, cut into strips
  • Sesame seeds for garnish
  • Chili oil (optional)

Instructions:

  1. Prepare the Broth: In a large pot, heat sesame oil over medium heat. Add minced garlic and ginger, and cook until fragrant, about 1 minute. Pour in chicken or vegetable broth and water. Bring to a simmer.
  2. Flavor the Broth: Stir in soy sauce, miso paste, rice vinegar, and brown sugar. Mix well until the miso paste is fully dissolved. Continue to simmer for about 10 minutes.
  3. Add Vegetables: Add sliced mushrooms and cook for about 5 minutes, or until tender. Stir in baby spinach and corn kernels, and cook for another 2 minutes until the spinach is wilted.
  4. Cook the Noodles: In a separate pot, cook ramen noodles according to package instructions. Drain and divide into serving bowls.
  5. Assemble the Ramen: Ladle the hot broth and vegetables over the cooked noodles in each bowl. Top with sliced green onions, a halved soft-boiled egg, nori strips, and a sprinkle of sesame seeds. Drizzle with chili oil if desired.
  6. Serve: Serve the ramen immediately while hot. Enjoy the rich flavors and comforting warmth of this classic Japanese dish.

Notes:

For a richer broth, you can use pork broth or add a bit of bonito flakes to the chicken broth. Feel free to customize the toppings to your liking, such as adding bamboo shoots or bean sprouts.
