Ingredients:

- 2 packs ramen noodles

- 2 tablespoons miso paste
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 cup sliced mushrooms (shiitake or button)
- 1 cup baby spinach
- 1/2 cup corn kernels
- 2 green onions, sliced
- 2 soft-boiled eggs
- 1 sheet nori, cut into strips
- Sesame seeds for garnish
- Chili oil (optional)
Instructions:
- Prepare the Broth: In a large pot, heat sesame oil over medium heat. Add minced garlic and ginger, and cook until fragrant, about 1 minute. Pour in chicken or vegetable broth and water. Bring to a simmer.

- Assemble the Ramen: Ladle the hot broth and vegetables over the cooked noodles in each bowl. Top with sliced green onions, a halved soft-boiled egg, nori strips, and a sprinkle of sesame seeds. Drizzle with chili oil if desired.
