Steamed Momos

Ingredients:
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup water (or as needed)
- 250g minced chicken or vegetables (or a mix of both)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch ginger, minced
- 1 cup cabbage, finely shredded
- 1 carrot, finely grated
- 2-3 green chilies, finely chopped (optional)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp vegetable oil
- Salt and pepper to taste
- 1-2 cups water (for steaming)
- Oil for greasing the steamer
Instructions:
- Prepare the Dough: In a large bowl, mix the flour, baking powder, and salt. Gradually add water, kneading until you have a smooth and elastic dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
- Prepare the Filling: Heat oil in a pan over medium heat. Add garlic, ginger, and onions. Sauté until onions are translucent. Add the minced chicken or vegetables and cook until fully cooked. Add cabbage, carrot, and green chilies (if using). Cook for another 5 minutes. Stir in soy sauce and oyster sauce (if using). Season with salt and pepper. Remove from heat and let it cool.
- Assemble the Momos: Divide the dough into small balls. Roll each ball into a thin circle on a lightly floured surface. Place a spoonful of filling in the center of each circle. Fold the edges over the filling and pleat to seal, forming a small pouch or dumpling. Ensure that the edges are well-sealed to avoid leakage during steaming.
- Prepare for Steaming: Grease the steamer trays or bamboo steamer with a little oil to prevent sticking. Arrange the momos in a single layer on the trays, making sure they do not touch each other.
- Steam the Momos: Bring water to a boil in the steamer or large pot with a steaming rack. Place the trays with momos in the steamer, cover, and steam for 15-20 minutes until the momos are cooked through and the dough is translucent.
- Serve: Serve hot with your favorite dipping sauce or chutney. Enjoy your soft and delicious steamed momos!
Notes:
For a vegetarian version, use finely chopped mushrooms, tofu, or paneer instead of minced chicken. You can also experiment with different herbs and spices to enhance the flavor.
