Bulgur Wheat Salad

Ingredients:
- 1 cup bulgur wheat
- 1 1/2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
- Feta cheese (optional), crumbled
Instructions:
- Prepare Bulgur Wheat: In a medium pot, bring the water or vegetable broth to a boil. Add the bulgur wheat, reduce heat to low, cover, and simmer for 12-15 minutes, or until the bulgur is tender and the liquid is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork and let it cool.
- Combine Vegetables: In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint.
- Mix Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Assemble Salad: Add the cooled bulgur wheat to the bowl with vegetables. Pour the dressing over the salad and toss to combine. Adjust seasoning if needed.
- Serve: Garnish with crumbled feta cheese, if using. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
