Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cayenne pepper (optional)
  • 1 can (28 oz) crushed tomatoes
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and pepper, to taste
  • 6 large eggs
  • Fresh parsley or cilantro, chopped (for garnish)
  • Crumbled feta cheese (optional)
  • Crusty bread or pita for serving

Instructions:

  1. Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Add the Spices: Stir in the cumin, paprika, and cayenne pepper (if using). Cook for about 1 minute to toast the spices and enhance their flavors.
  3. Cook the Tomato Sauce: Pour in the crushed tomatoes, and add the sugar, salt, and pepper. Stir to combine, then bring the mixture to a simmer. Let it cook for 10-15 minutes, allowing the sauce to thicken slightly. Taste and adjust seasoning as needed.
  4. Make Wells for Eggs: Use a spoon to create small wells in the tomato sauce. Gently crack an egg into each well, being careful not to break the yolks. Cover the skillet and cook for 5-8 minutes, until the egg whites are set but the yolks remain runny (or cook to your preferred doneness).
  5. Garnish and Serve: Remove the skillet from the heat. Sprinkle fresh parsley or cilantro on top and add crumbled feta cheese, if desired. Serve with warm crusty bread or pita for dipping.

Notes:

Shakshuka is a versatile dish. Feel free to add other vegetables like spinach or mushrooms. You can also adjust the spiciness by increasing or decreasing the cayenne pepper. Best enjoyed with crusty bread!
