Homemade Churros

Ingredients:
- 1 cup water
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 3 large eggs
- Vegetable oil, for frying
- 1/2 cup granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
Instructions:
- Prepare the Churro Dough: In a medium saucepan, combine water, 2 tablespoons sugar, salt, and butter. Bring to a boil over medium heat, stirring until the butter is melted. Remove from heat and add the flour all at once, stirring vigorously until the dough comes together and pulls away from the sides of the pan.
- Incorporate the Eggs: Allow the dough to cool slightly, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Heat the Oil: Heat about 2 inches of vegetable oil in a large pot or deep skillet to 350°F (175°C).
- Pipe the Churros: Transfer the churro dough to a piping bag fitted with a large star tip. Pipe strips of dough directly into the hot oil, cutting them to your desired length with scissors. Fry in batches, turning occasionally, until the churros are golden brown and crisp, about 2-3 minutes per side.
- Coat the Churros: Using a slotted spoon, transfer the churros to a plate lined with paper towels to drain excess oil. Mix the 1/2 cup sugar and ground cinnamon in a shallow dish and roll the warm churros in the mixture until evenly coated.
- Serve: Serve the churros warm with a side of chocolate or caramel dipping sauce if desired. Enjoy your homemade churros!
Notes:
Churros are best enjoyed fresh, but you can store them in an airtight container for a day or two. Reheat them briefly in an oven to regain their crispiness.
