Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

Instructions:

  1. Prepare the Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  2. Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened, about 3 minutes. Add the ground beef or turkey, and cook until browned, breaking it up with a spoon.
  3. Combine Ingredients: Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and black pepper. Cook for an additional 5 minutes until well combined and heated through.
  4. Stuff the Peppers: Spoon the filling into each bell pepper, packing it in tightly. Place the stuffed peppers upright in a baking dish. Sprinkle the shredded cheddar cheese and grated Parmesan cheese on top of each pepper.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  6. Serve: Let the peppers cool slightly before serving. Enjoy!
