Stuffed Bell Peppers

Ingredients:
- 4 large bell peppers (any color)
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes, drained
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- Salt and black pepper, to taste
- 2 tablespoons olive oil
Instructions:
- Prepare the Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened, about 3 minutes. Add the ground beef or turkey, and cook until browned, breaking it up with a spoon.
- Combine Ingredients: Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and black pepper. Cook for an additional 5 minutes until well combined and heated through.
- Stuff the Peppers: Spoon the filling into each bell pepper, packing it in tightly. Place the stuffed peppers upright in a baking dish. Sprinkle the shredded cheddar cheese and grated Parmesan cheese on top of each pepper.
- Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve: Let the peppers cool slightly before serving. Enjoy!
