Shrimp Scampi

Ingredients:
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup dry white wine (or chicken broth)
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and black pepper, to taste
- 8 ounces pasta (linguine or spaghetti)
Instructions:
- Cook the Pasta: Cook the pasta according to the package instructions. Drain and set aside.
- Sauté the Shrimp: In a large skillet, melt 2 tablespoons of butter with the olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
- Prepare the Sauce: In the same skillet, add the remaining 1 tablespoon of butter. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
- Deglaze the Pan: Pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for 2 minutes, allowing the sauce to reduce slightly.
- Combine and Serve: Return the shrimp to the skillet along with the cooked pasta. Toss everything together until well-coated with the sauce. Stir in the chopped parsley and season with salt and black pepper to taste.
- Serve: Serve immediately, garnished with additional parsley and lemon wedges if desired.
Notes:
For extra flavor, you can add a pinch of Parmesan cheese before serving.
