Ingredients:

  • 2 tablespoons green curry paste

  • 1 can (14 ounces) coconut milk
  • 1 cup chicken broth
  • 1 pound chicken breast, thinly sliced
  • 1 red bell pepper, sliced
  • 1 cup bamboo shoots, drained
  • 1 cup baby corn, cut in half
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup Thai basil leaves
  • 1 lime, juiced
  • Cooked jasmine rice, for serving

Instructions:

  1. Prepare Ingredients: Gather and prepare all the ingredients. Slice the chicken, bell pepper, and cut the baby corn in half.
  2. Cook the Curry Paste: In a large skillet or wok, heat the vegetable oil over medium heat. Add the green curry paste and cook for about 1-2 minutes, or until fragrant.
  3. Add Coconut Milk: Stir in the coconut milk and chicken broth. Bring to a simmer.
  4. Add Chicken: Add the sliced chicken to the skillet and cook for about 5-7 minutes, or until the chicken is cooked through.
  5. Add Vegetables: Stir in the red bell pepper, bamboo shoots, and baby corn. Simmer for another 5 minutes, or until the vegetables are tender.
  6. Season the Curry: Stir in the fish sauce and brown sugar. Adjust seasoning to taste. Add more fish sauce or sugar if needed.
  7. Add Basil and Lime: Remove from heat and stir in the Thai basil leaves and lime juice.
  8. Serve: Serve the Thai Green Curry over cooked jasmine rice. Garnish with extra basil leaves if desired.

Notes:

For a spicier curry, you can add more green curry paste or some sliced Thai bird chilies. Adjust the sweetness and saltiness to your preference.
