Thai Green Curry

Ingredients:
- 2 tablespoons green curry paste
- 1 tablespoon vegetable oil
- 1 can (14 ounces) coconut milk
- 1 cup chicken broth
- 1 pound chicken breast, thinly sliced
- 1 red bell pepper, sliced
- 1 cup bamboo shoots, drained
- 1 cup baby corn, cut in half
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 cup Thai basil leaves
- 1 lime, juiced
- Cooked jasmine rice, for serving
Instructions:
- Prepare Ingredients: Gather and prepare all the ingredients. Slice the chicken, bell pepper, and cut the baby corn in half.
- Cook the Curry Paste: In a large skillet or wok, heat the vegetable oil over medium heat. Add the green curry paste and cook for about 1-2 minutes, or until fragrant.
- Add Coconut Milk: Stir in the coconut milk and chicken broth. Bring to a simmer.
- Add Chicken: Add the sliced chicken to the skillet and cook for about 5-7 minutes, or until the chicken is cooked through.
- Add Vegetables: Stir in the red bell pepper, bamboo shoots, and baby corn. Simmer for another 5 minutes, or until the vegetables are tender.
- Season the Curry: Stir in the fish sauce and brown sugar. Adjust seasoning to taste. Add more fish sauce or sugar if needed.
- Add Basil and Lime: Remove from heat and stir in the Thai basil leaves and lime juice.
- Serve: Serve the Thai Green Curry over cooked jasmine rice. Garnish with extra basil leaves if desired.
