Grilled Portobello Mushrooms

Ingredients:
- 4 large Portobello mushrooms, cleaned and stems removed
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Prepare Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, rosemary, thyme, salt, and pepper.
- Marinate Mushrooms: Place the Portobello mushrooms in a large resealable plastic bag or shallow dish. Pour the marinade over the mushrooms and toss to coat evenly. Let them marinate in the refrigerator for at least 30 minutes.
- Preheat Grill: Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed and the grill is hot.
- Grill Mushrooms: Remove the mushrooms from the marinade and place them on the grill. Cook for 4-5 minutes on each side, or until the mushrooms are tender and have nice grill marks.
- Serve: Transfer the grilled mushrooms to a serving platter. Garnish with chopped fresh parsley, if desired. Serve hot as a main dish or side.
Notes:
These mushrooms are delicious on their own, but they can also be served on burgers, sandwiches, or alongside other grilled vegetables.
