Vegetable Curry

Ingredients:
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 cup chopped tomatoes (canned or fresh)
- 1 cup vegetable broth
- 2 cups mixed vegetables (carrots, bell peppers, potatoes, peas, etc.)
- 1 cup coconut milk
- Salt and black pepper, to taste
- Fresh cilantro, for garnish
Instructions:
- Heat the Oil: In a large pot or Dutch oven, heat the vegetable oil over medium heat.
- Sauté the Aromatics: Add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and ginger, and cook for another 2 minutes.
- Add Spices: Stir in the curry powder, ground turmeric, ground cumin, and ground coriander. Cook for 1-2 minutes, stirring constantly to toast the spices.
- Cook the Tomatoes: Add the chopped tomatoes to the pot and cook for about 5 minutes until they break down and form a sauce.
- Add Broth and Vegetables: Pour in the vegetable broth and bring to a boil. Add the mixed vegetables, reduce heat to a simmer, and cook for 10-15 minutes, or until the vegetables are tender.
- Add Coconut Milk: Stir in the coconut milk and cook for another 5 minutes, allowing the curry to thicken slightly. Season with salt and black pepper to taste.
- Garnish and Serve: Garnish with fresh cilantro before serving. Enjoy with rice or naan bread!
