Ingredients:

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon curry powder

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cup chopped tomatoes (canned or fresh)
  • 1 cup vegetable broth
  • 2 cups mixed vegetables (carrots, bell peppers, potatoes, peas, etc.)
  • 1 cup coconut milk
  • Salt and black pepper, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Heat the Oil: In a large pot or Dutch oven, heat the vegetable oil over medium heat.
  2. Sauté the Aromatics: Add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and ginger, and cook for another 2 minutes.

  4. Cook the Tomatoes: Add the chopped tomatoes to the pot and cook for about 5 minutes until they break down and form a sauce.
  5. Add Broth and Vegetables: Pour in the vegetable broth and bring to a boil. Add the mixed vegetables, reduce heat to a simmer, and cook for 10-15 minutes, or until the vegetables are tender.
  6. Add Coconut Milk: Stir in the coconut milk and cook for another 5 minutes, allowing the curry to thicken slightly. Season with salt and black pepper to taste.
  7. Garnish and Serve: Garnish with fresh cilantro before serving. Enjoy with rice or naan bread!
