Braised Lamb Shanks

Ingredients:
- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 1 cup red wine
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper, to taste
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Brown the Lamb Shanks: Heat olive oil in a large oven-safe pot over medium-high heat. Season the lamb shanks with salt and pepper, then brown them on all sides, about 8 minutes. Remove from the pot and set aside.
- Sauté the Vegetables: In the same pot, add the onion, carrots, and garlic. Sauté until softened, about 5-6 minutes.
- Add Liquid and Herbs: Pour in the red wine, beef broth, and diced tomatoes. Add the rosemary and thyme sprigs. Stir to combine and bring to a simmer.
- Braise the Lamb Shanks: Return the browned lamb shanks to the pot. Cover with a lid and transfer to the preheated oven. Braise for 2 to 2.5 hours, or until the lamb is tender and falling off the bone.
- Serve: Remove the lamb shanks from the pot and serve with the braising liquid and vegetables spooned over the top. Enjoy with mashed potatoes or polenta.
Notes:
For deeper flavor, you can marinate the lamb shanks in red wine and herbs for several hours or overnight before cooking.
