Phở

Ingredients:
- 1 lb beef bones (marrow bones or oxtail)
- 1 lb beef brisket
- 1 onion, halved
- 1 piece fresh ginger, sliced
- 2 cinnamon sticks
- 3 star anise
- 4 cloves
- 1 tablespoon coriander seeds
- 1 tablespoon fish sauce
- Salt, to taste
- 1 lb rice noodles
- Thinly sliced beef (sirloin or round)
- Fresh herbs (cilantro, Thai basil)
- Bean sprouts
- Lime wedges
- Sliced chili peppers (optional)
Instructions:
- Prepare the Broth: In a large pot, cover the beef bones and brisket with water. Bring to a boil and simmer for 10 minutes. Drain the water, rinse the bones and brisket, and refill the pot with clean water.
- Char the Aromatics: While the broth simmers, char the onion and ginger in a dry skillet over medium-high heat until slightly blackened. Add them to the broth along with the cinnamon, star anise, cloves, and coriander seeds.
- Simmer the Broth: Let the broth simmer for 2-3 hours, skimming off any impurities. After simmering, remove the bones and brisket. Slice the brisket thinly and set aside. Strain the broth and season with fish sauce and salt to taste.
- Cook the Noodles: Cook the rice noodles according to the package instructions. Drain and divide the noodles into serving bowls.
- Assemble the Phở: Top the noodles with the sliced brisket and raw beef slices. Pour the hot broth over the top, allowing the raw beef to cook in the heat.
- Serve: Serve with fresh herbs, bean sprouts, lime wedges, and sliced chili peppers. Add fish sauce or hoisin sauce if desired. Enjoy!
Notes:
For a deeper flavor, roast the bones in the oven at 400°F (200°C) for 30 minutes before making the broth.
