Instructions:

  1. Prepare the Broth: In a large pot, cover the beef bones and brisket with water. Bring to a boil and simmer for 10 minutes. Drain the water, rinse the bones and brisket, and refill the pot with clean water.
  2. Char the Aromatics: While the broth simmers, char the onion and ginger in a dry skillet over medium-high heat until slightly blackened. Add them to the broth along with the cinnamon, star anise, cloves, and coriander seeds.
  3. Simmer the Broth: Let the broth simmer for 2-3 hours, skimming off any impurities. After simmering, remove the bones and brisket. Slice the brisket thinly and set aside. Strain the broth and season with fish sauce and salt to taste.
  4. Cook the Noodles: Cook the rice noodles according to the package instructions. Drain and divide the noodles into serving bowls.
  5. Assemble the Phở: Top the noodles with the sliced brisket and raw beef slices. Pour the hot broth over the top, allowing the raw beef to cook in the heat.
  6. Serve: Serve with fresh herbs, bean sprouts, lime wedges, and sliced chili peppers. Add fish sauce or hoisin sauce if desired. Enjoy!

For a deeper flavor, roast the bones in the oven at 400°F (200°C) for 30 minutes before making the broth.
