Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup beef broth
- 2 tbsp tomato paste
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish (optional)
Instructions:
- Cook the Beef: Heat vegetable oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Remove excess fat if needed.
- Sauté the Vegetables: Add chopped onion, garlic, and bell pepper to the pot. Cook until vegetables are softened, about 5 minutes.
- Add the Tomatoes and Beans: Stir in diced tomatoes, kidney beans, black beans, and beef broth. Mix well.
- Season the Chili: Add tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine.
- Simmer: Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally, until the chili thickens and flavors meld.
- Adjust Seasoning: Taste and adjust seasoning if necessary. Add more chili powder or salt if desired.
- Serve: Ladle the chili into bowls and garnish with fresh cilantro if desired. Serve hot with your favorite toppings like shredded cheese, sour cream, or chopped green onions.
Notes:
For a spicier kick, add a chopped jalapeño pepper or a dash of hot sauce to the pot.
