Grilled Halibut with Lemon Butter

Ingredients:
- 4 halibut fillets (6 oz each)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons unsalted butter, melted
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon chopped fresh parsley
- Lemon wedges, for serving
Instructions:
- Preheat the Grill: Preheat your grill to medium-high heat and lightly oil the grill grates.
- Season the Halibut: Pat the halibut fillets dry with paper towels. Brush each fillet with olive oil and season with salt and pepper on both sides.
- Grill the Halibut: Place the halibut fillets on the grill and cook for 4-5 minutes per side, until the fish is opaque and flakes easily with a fork.
- Make the Lemon Butter: While the halibut is grilling, whisk together the melted butter, lemon juice, lemon zest, and chopped parsley in a small bowl.
- Serve: Transfer the grilled halibut to a serving platter and drizzle with the lemon butter sauce. Serve with lemon wedges on the side. Enjoy!
