Ingredients:

  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1 tbsp honey
  • Juice of 1 lemon
  • Fresh herbs (parsley or thyme) for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Marinade: In a small bowl, mix olive oil, minced garlic, cumin, paprika, oregano, black pepper, salt, honey, and lemon juice.
  3. Marinate the Pork: Rub the pork tenderloin with the marinade, ensuring it's well coated. Let it marinate for at least 30 minutes to an hour. For deeper flavor, you can refrigerate it overnight.
  4. Brown the Pork: Heat a skillet over medium-high heat. Sear the pork tenderloin on all sides until it's nicely browned, about 3-4 minutes per side.
  5. Roast the Pork: Transfer the seared pork tenderloin to a baking dish. Place it in the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Rest the Pork: Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute and keeps the meat tender.
  7. Slice and Serve: Slice the pork tenderloin into medallions. Garnish with fresh herbs and serve with your favorite side dishes, such as roasted vegetables or mashed potatoes.

Notes:

For added flavor, you can add a splash of balsamic vinegar to the marinade or drizzle some over the pork before serving.
