Pork Tenderloin

Ingredients:
- 1 pork tenderloin (about 1 lb)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1 tbsp honey
- Juice of 1 lemon
- Fresh herbs (parsley or thyme) for garnish
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Marinade: In a small bowl, mix olive oil, minced garlic, cumin, paprika, oregano, black pepper, salt, honey, and lemon juice.
- Marinate the Pork: Rub the pork tenderloin with the marinade, ensuring it's well coated. Let it marinate for at least 30 minutes to an hour. For deeper flavor, you can refrigerate it overnight.
- Brown the Pork: Heat a skillet over medium-high heat. Sear the pork tenderloin on all sides until it's nicely browned, about 3-4 minutes per side.
- Roast the Pork: Transfer the seared pork tenderloin to a baking dish. Place it in the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Rest the Pork: Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute and keeps the meat tender.
- Slice and Serve: Slice the pork tenderloin into medallions. Garnish with fresh herbs and serve with your favorite side dishes, such as roasted vegetables or mashed potatoes.
Notes:
For added flavor, you can add a splash of balsamic vinegar to the marinade or drizzle some over the pork before serving.
