Spinach and Feta Frittata

Ingredients:
- 6 large eggs
- 1/2 cup crumbled feta cheese
- 1 cup fresh spinach, chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup milk or cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a medium oven-safe skillet or baking dish.
- Sauté the Vegetables: Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, and cook until softened, about 3-4 minutes. Stir in the chopped spinach and cook for another 2 minutes until wilted. Remove from heat and set aside.
- Whisk the Eggs: In a large bowl, whisk together the eggs, milk, salt, pepper, and red pepper flakes (if using).
- Combine Ingredients: Add the sautéed spinach mixture and crumbled feta cheese into the egg mixture. Stir until well combined.
- Cook the Frittata: Pour the mixture into the prepared skillet or baking dish. Transfer to the preheated oven and bake for 20-25 minutes, or until the frittata is set in the center and slightly golden on top.
- Serve: Remove from the oven and let cool for a few minutes before slicing and serving. Enjoy!
Notes:
You can add other vegetables like bell peppers or mushrooms for extra flavor. Serve the frittata with a side salad or some crusty bread for a complete meal.
