  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)
  • Pita bread and tzatziki sauce, for serving

Instructions:

  1. Preheat the Grill: Preheat your grill or grill pan over medium-high heat.
  2. Mix the Ingredients: In a large bowl, combine the ground lamb, chopped onion, garlic, parsley, mint, cumin, coriander, paprika, cayenne (if using), salt, and pepper. Mix until well combined.
  3. Form the Koftas: Divide the mixture into equal portions and shape each portion into elongated patties or skewers.
  4. Cook the Koftas: Brush the grill with olive oil to prevent sticking. Grill the koftas for 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
  5. Serve: Remove from the grill and let rest for a few minutes. Serve with warm pita bread and tzatziki sauce.

Notes:

You can also bake the koftas in the oven at 400°F (200°C) for about 20 minutes, turning halfway through.
