Lamb Kofta

Ingredients:
- 1 lb ground lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
- Pita bread and tzatziki sauce, for serving
Instructions:
- Preheat the Grill: Preheat your grill or grill pan over medium-high heat.
- Mix the Ingredients: In a large bowl, combine the ground lamb, chopped onion, garlic, parsley, mint, cumin, coriander, paprika, cayenne (if using), salt, and pepper. Mix until well combined.
- Form the Koftas: Divide the mixture into equal portions and shape each portion into elongated patties or skewers.
- Cook the Koftas: Brush the grill with olive oil to prevent sticking. Grill the koftas for 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
- Serve: Remove from the grill and let rest for a few minutes. Serve with warm pita bread and tzatziki sauce.
Notes:
You can also bake the koftas in the oven at 400°F (200°C) for about 20 minutes, turning halfway through.
