Vegetable Stir-Fry with Tofu

Ingredients:
- 1 block firm tofu, pressed and cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 carrot, julienned
- 2 cups broccoli florets
- 1 zucchini, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- 1/4 cup vegetable broth (or water)
- Cooked brown rice (for serving)
- Sesame seeds (for garnish)
- Sliced green onions (for garnish)
Instructions:
- Prepare the Tofu: Press the tofu to remove excess water, then cut into cubes. In a small bowl, toss the tofu with 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Set aside to marinate for 10 minutes.
- Cook the Tofu: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the tofu cubes and cook for 4-5 minutes on each side, until golden and crispy. Remove from the skillet and set aside.
- Stir-fry the Vegetables: In the same skillet, add the garlic and ginger, and sauté for 30 seconds. Add the bell peppers, carrots, broccoli, and zucchini. Stir-fry for 3-4 minutes, until the vegetables are tender but still crisp.
- Make the Sauce: In a small bowl, mix together the soy sauce, hoisin sauce, cornstarch slurry, and vegetable broth. Pour the sauce into the skillet with the vegetables, stirring constantly until the sauce thickens and coats the vegetables, about 2 minutes.
- Add the Tofu: Add the cooked tofu back into the skillet and toss everything together, ensuring the tofu and vegetables are evenly coated with the sauce. Cook for another 1-2 minutes to heat through.
- Serve: Serve the stir-fry over cooked brown rice. Garnish with sesame seeds and sliced green onions. Enjoy!
Notes:
For extra flavor, add a pinch of red pepper flakes or a drizzle of chili oil. You can substitute any vegetables of your choice, like snap peas, mushrooms, or baby corn.
