Beef and Broccoli Stir-fry

Ingredients:
- 1 lb beef sirloin or flank steak, thinly sliced
- 3 cups broccoli florets
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons cornstarch
- 2 tablespoons water (for cornstarch slurry)
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon sesame oil
- 1 tablespoon brown sugar
- 1/4 cup beef broth (or water)
- Cooked white rice (for serving)
Instructions:
- Prepare the Beef: In a bowl, toss the thinly sliced beef with 1 tablespoon of soy sauce and set aside to marinate for 10-15 minutes.
- Blanch the Broccoli: Bring a pot of water to a boil, add the broccoli florets, and cook for 2 minutes until bright green and tender-crisp. Drain and set aside.
- Make the Sauce: In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, beef broth, sesame oil, brown sugar, and cornstarch mixed with water (slurry).
- Stir-fry the Beef: Heat a large skillet or wok over high heat. Add 1 tablespoon of vegetable oil and stir-fry the beef in batches for 2-3 minutes until browned and cooked through. Remove from the pan and set aside.
- Sauté Garlic and Ginger: In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté for 30 seconds until fragrant.
- Add Sauce and Broccoli: Pour the sauce into the skillet and bring it to a simmer. Add the blanched broccoli and stir to coat with the sauce.
- Combine Beef and Broccoli: Add the cooked beef back into the skillet and toss everything together until the beef and broccoli are evenly coated with the sauce and heated through, about 1-2 minutes.
- Serve: Remove from heat and serve the beef and broccoli stir-fry over steamed white rice. Enjoy!
Notes:
For extra flavor, you can add red pepper flakes or chili oil for a spicy kick. Substitute chicken or tofu for beef if desired.
